Spritz Butter Cookies
Soy foods for the holidays

Ingredients:
Makes 72 cookies 1-1/2 cups all-purpose flour 1/2 cup soy flour 2 teaspoons baking powder 1 cup unsalted butter, softened 1 cup powdered sugar 1 egg 1 teaspoon vanilla extract 1/2 teaspoon almond extract Colored sugar for garnish (optional)

Instructions:
Preheat oven to 350 degrees. Mix together the all-purpose flour, soy flour and baking soda. Set aside. Cream the butter and powdered sugar in a large mixing bowl until light and fluffy. Beat in the egg, vanilla and almond extract. Gradually add the flour mixture to the creamed mixture and mix well. Fill a cookie press with the dough and press cookies onto ungreased cookie sheets. If desired, top with colored sugar. Bake for 10-12 minutes, or until edges are just starting to turn brown. Cool slightly on cookie sheet, then remove to a rack to cool completely. Per 2-cookie serving: 66 calories, 6 grams fat (3.3 grams saturated fat), 1 gram protein (0.4 gram soy protein), 4 grams carbohydrates, 25 mg sodium, 19 mg cholesterol, less than 1 gram dietary fiber All materials courtesy of the Michigan Soybean Promotion Committee.
