Christmas Shrimp Pizzas or Appetizers

Ingredients:
6 English muffins, split and toasted 2 tablespoons olive oil 1 tablespoon butter 1-2 cups chopped mushrooms 2 tablespoons chopped onions 2 minced garlic cloves 1-2 tablespoons chopped black olives 1 tablespoon chopped pimentos 1 can condensed cheddar cheese soup (don’t dilute with water) 1 pound chopped cooked shrimp, peeled, de-veined and chopped 2 cups shredded mozzarella cheese

Instructions:
Split and toast the English muffins. Set aside on a baking sheet with sides or in a casserole dish. Place the olive oil and butter into a skillet and sauté the mushrooms, onions, garlic, chopped black olives and pimentos. When the onions are translucent stir in the cheddar cheese. Stir in a little water if the sauce is too stiff. Spread this sauce over the toasted muffins. Arrange a good sprinkling of the chopped shrimp on each muffin. Top with the shredded mozzarella cheese. Place under your broiler for a few minutes until the cheese is melted and has started to brown. Serve as individual pizzas, or quarter so you can serve hot appetizers.
