Zucchini One-Dish Dinner

Ingredients:
1 can condensed cream of tomato soup 1 soup can of water 1 tablespoon lemon juice 1/2 teaspoon basil 1/2 teaspoon garlic powder 6 cups sliced zucchini 2-3 cups broccoli florets 1 green bell pepper cut into strips 1 cup chopped onion 2 tablespoons grated Parmesan cheese Meatballs, smoked sausage or cooked chicken

Instructions:
Place the soup, water, lemon juice, basil, garlic powder, zucchini, broccoli, green pepper slices and chopped onion into a large skillet. Cover the skillet and use medium heat to bring this to a boil. When it’s to the boil, turn the heat down low and cook for 15-20 minutes. I like to cook this until the vegetables are tender. Stir in the Parmesan cheese, cover and heat for another 5-10 minutes. Serve in a vegetable tureen or casserole dish. It will have good colors and delicious flavors, and will make a nice vegetable side dish for any meal. This is a good dish for doctoring; you can fry some meatballs, smoked sausage or cooked chicken to incorporate into it to make a one-dish dinner. This is the way I like it best, as the meat in there helps take my mind off the fact I’m actually eating zucchini. But not during Lent!
