Easy Fried Rice that is Never Fried

Ingredients:
Left over boiled rice, about 1-1/2 cups 1/2 medium onion, minced Liquid eggs, about one cup full 4 strips of turkey bacon, broken up

Instructions:
Not only is this rice never fried, it’s also healthy since you use low-cholesterol liquid eggs and the turkey bacon is heated in the microwave rather than fried. Place the leftover rice, minced onion and the liquid eggs into a microwave safe bowl. Heat at full power four minutes. Remove from the microwave and stir together well. Return to the microwave for another four minutes. Remove and stir again. Just be sure the eggs are fully cooked and incorporated throughout the rice. Stir again. Add the microwaved turkey bacon, which you’ve torn into small pieces, to the container of rice. Stir in well and serve. You can use chopped cooked pork or chicken instead of the turkey bacon if you wish. Seasoning such as soy sauce or sweet-and-sour sauce can be used to top each serving.
