Hot Sauce for Hot Dads

Ingredients:
1 tablespoon vegetable oil 1/2 cup chopped onion 1/2 cup bell pepper, any color 1 or 2 jalapeno peppers, seeds removed, chopped 1/4 cup chopped celery 1 garlic clove, chopped thin 3/4 cup water 6-ounce can tomato paste 2 tablespoons Tabasco brand hot sauce, red or green

Instructions:
Heat the vegetable oil and sauté the onion, bell pepper, jalapeno slices, celery and garlic a few minutes over medium heat until onions become translucent and bell pepper slices are tender. Stir this regularly while sautéing. Add the water, tomato paste and Tabasco sauce to the skillet and stir in very well. Continue sautéing about 10 more minutes. It’s ready to spoon over anything and enjoy. This only makes a small batch, but is enough for a trial taste. If Dad likes it, you can multiply the ingredients and make a big batch. It gets even better after sitting in the refrigerator a day or two and then being reheated.
