Cherry Cobbler

Ingredients:

1 c. flour
1 c. sugar, divided
3 t. baking powder
1/2 c. milk
1 T. melted butter or margarine
1 can sour cherries with juice
Whipped cream

Instructions:

Combine the flour, half cup of sugar and baking powder. Stir it well. Combine the milk and the melted butter or margarine. Stir the liquid into the flour mixture to make your batter.

Pour the batter into a 9-inch baking dish with 2 1/2-inch sides. Combine the cherries, juice and remaining sugar. Place into a saucepan and bring to the boil. Pour the hot sweetened cherry mixture over the batter.

Bake at 350 degrees for approximately 30 minutes. Check the top to be sure the batter is baked through in the center.

Slice and serve with a dollop of whipped cream on top of each serving. If you have some sprigs of mint on hand you might place one or two on top of the whipped cream. This will be a delicious and memorable dessert.
