BLT Bites (Without the L)

Ingredients:
16-20 cherry or grape tomatoes 1 pound bacon, cooked and crumbled 1/2 cup mayonnaise or salad dressing 1/3 cup chopped green onions 3 tablespoons grated Parmesan cheese 2 tablespoons snipped fresh parsley

Instructions:
When making these cut a thin slice off the top of each tomato and scoop out the pulp. Invert the tomatoes on a paper towel to drain. Combine the rest of the ingredients and mix together well. When the tomatoes are drained, spoon the mixture into the hollowed-out tomatoes. These are best served cold, so refrigerate the BLT Bites for several hours or overnight before serving. There’s one trouble with these BLT Bites. They’re so delicious and so easy to pop into your mouth that this recipe will need to be doubled, at least. They’re sort of like potato chips. You can’t eat just one, and it’s difficult to resist grabbing a few when ever they are within reach. Thanks to Don and Nancy for this easy and delicious recipe!
