Greek Pizza
Skinny Cooks

Ingredients:

1 c. chopped artichoke hearts
1/2 c. frozen chopped spinach, thawed
12 black olives, cut in half
2 garlic cloves, minced
8 boiled and peeled shrimp, chopped
1 c. water
8 oz. Philadelphia cream cheese, softened
1/2 c. grated Parmesan cheese
1/2 t. crushed red pepper flakes
1/4 t. salt
Greek pita flat bread
Olive oil

Instructions:

Place the spinach, artichoke hearts, black olives, garlic and chopped shrimp into a pan with a cup of water and heat 10 or 15 minutes. Drain.

Heat the cream cheese in your microwave for about 1 minute to get it nice and soft. Stir the drained spinach and artichoke hearts mixture into the cream cheese. Add the Parmesan cheese, pepper flakes and salt to the pot and stir it very well to blend the flavors.

Brush each round of pita flat bread on both sides with the olive oil.

Sauté in a non-stick skillet until it’s a nice golden color. Spread the hot spinach, artichoke and shrimp mixture on each pita flat bread round. This makes a very delicious pizza you’re sure to enjoy.
