Two-Layer Gelatin & Cream Cheese Salad
Skinny Cooks

Ingredients:
First layer 1 (3 ounces) pack of lime gelatin 1 cup boiling water 3/4 cup cold water 1 (8 ounces) package Philadelphia Brand Cream Cheese, softened Second layer 1 (3 ounces) package lime gelatin 1 cup boiling water 1 cup ginger ale 1 cup drained fruit (try peach slices, pear slices or cut up grapefruit sections) 1 cup diced apples 1/4 cup chopped walnuts Whipped cream to top off each serving

Instructions:
Dissolve the gelatin in the boiling water, then add the cold water. Take your time and add this to the softened cream cheese, mixing to get it well blended. Pour this into the bottom of your casserole dish or your gelatin mold. Refrigerate until it sets up, firm. For the second layer dissolve the gelatin in the boiling water and add the ginger ale. Refrigerate a short while until it’s partially thickened. Add the fruit and chopped walnuts and fold in. Pour over the first layer and refrigerate until it’s well set up. Slice or remove from the mold to serve and top servings with whipped cream.
