Shrimp Stuffed Potato Boats

Ingredients:
2 large baked potatoes 2 tablespoons of butter 1/2 cup minced onion 1/4 cup minced celery 1 garlic clove minced 1/2 cup cream 1/2 teaspoon salt 1/4 teaspoon white pepper 1 cup chopped cooked shrimp or other seafood as mentioned above 1/2 cup shredded cheddar cheese Sour cream

Instructions:
Bake the potatoes, then cut them in half lengthways. Scoop out the potato pulp and put it in a mixing bowl, and add the cream, salt and pepper. Whip this mixture very well. Sautee the onion, celery and garlic in the butter for a few minutes to soften them. Add the chopped shrimp to the skillet, stir to blend and heat through. Now add the whipped potatoes to the skillet and make sure to heat everything thoroughly. Remove from the heat and stir in the shredded cheddar cheese. Spoon the heated mixture back into the potato shells. Since it’s whipped and has the additions, you’ll be able to mound it up to make a good-looking stuffed potato. Place the stuffed potatoes under the broiler for a couple of minutes to get some browning on the top. You can either put a dollop of sour cream on each potato before serving or just put it on the table and let those dining add as much as they wish. I personally like the sour cream with chives, as I think it looks a little more special and has a little extra good taste. Experiment with adding the other seafood or even other meats, and you’ll enjoy stuffed baked potatoes even more.
