Skinny Cooks Can't Be Trusted by Dave Kessler There are times when you need to step outside your same old breakfast rut. I do enjoy my regular cereal and I do enjoy my eggs; but when I feel like I’m getting stuck in a rut I like to experiment. That’s how this breakfast spaghetti came about. I had some leftover cooked spaghetti that had not been covered with any sauce. I also had some leftover Canadian bacon, which I always enjoy. There also was a nice, fresh box of jumbo eggs. Nothing could go wrong with ingredients like these. The other ingredients I used on this occasion included olive oil, garlic cloves and parmesan cheese. I couldn’t find any black olives or mushrooms in the pantry so I did without them, but they are great additions if you have some available. I only used a dinner plate and a small skillet to create my breakfast so there weren’t a bunch of things to wash. Breakfast Spaghetti
6 slices of Canadian bacon 2-3 cups of cooked spaghetti left over in the fridge 1/4 to 1/2 cup olive oil 4 garlic cloves, peeled and sliced thin 3 jumbo eggs Black pepper Parmesan cheese Optional: Black olives and mushrooms Arrange the 6 slices of Canadian bacon with 5 around the edge of the dish and 1 in the middle. Spread 2-3 cups of cold cooked spaghetti over the Canadian bacon. Set aside. In a skillet pour the olive oil. Peel and slice the garlic cloves in thin slices and put them in the skillet. Break the 3 eggs into the skillet and season with black pepper. Start frying the eggs and garlic slices over medium heat. Place a lid or another plate on top of the skillet so you won’t have to turn over the eggs in the skillet. Put your plate of Canadian bacon and spaghetti in the microwave. Cover it with a piece of absorbent paper. Zap it on High for 2-2.5 minutes. When the eggs in the skillet are fried, pour the eggs, garlic slices and olive oil over the spaghetti and Canadian bacon dish. Sprinkle on some parmesan cheese. This should be enough to serve one or two folks, or you can easily multiply the ingredients to serve a crowd. Use the optional items if you have them. Enjoy some biscuits with jelly on the side, or a toasted bagel and jelly to start your day on the right foot.
