Prepare a cool cake for a hot Valentine’s Day dinner setting

If you enjoy a chilled cake, here’s a recipe you’ll want to save for a number of reasons. It’s easy, since you’ll be using a yellow cake mix. And, the ingredients are not expensive.
It also looks great and it has a refreshing taste and texture.
This is a three-layer cake, for which you’ll need three round layer-cake pans that you have greased and floured. You bake the cake layers at 350 degrees for 20-25 minutes. Let the cakes cool before you spread on the frosting. Be sure to include the juice of the mandarin oranges when you mix your cake batter so you’ll have a moist and flavorful cake.
Chilled Pudding & Valentine’s Cake

Cake
1 box yellow cake mix
2 eggs
1/2 cup oil
1 can mandarin oranges, with juice
Frosting
1 can crushed pineapple
1 small instant pudding
1 cup shredded coconut
1 large Cool Whip
Maraschino cherries
Use a large bowl in which to mix the batter. Be sure to include the mandarin orange juice in the batter mix. When batter is well mixed, pour into 3 round layer cake pans that are greased and floured.
Bake in preheated oven set at 350 degrees for 20-25 minutes. When baked, let cool to room temperature.
To make the frosting use a large bowl in which to mix the pineapple and pudding. Stir in Cool Whip and spread between the layers and on top and sides of the stacked cake.
Sprinkle the frosted cake with coconut and highlight the cake by arranging some maraschino cherries on top. Keep the cake refrigerated until ready to slice and serve.
