Ohio, West Virginia dairy farmers thinking of spring

COLUMBUS, Ohio — The American Dairy Association Mideast, representing Ohio and West Virginia dairy farms, is energized by spring, offering recipes to consumers who want more ideas for milk and cheese.

Easter has passed, but there are other opportunities to make Southwestern Greek Yogurt Deviled Eggs. Cleveland, Ohio, food blogger A Cedar Spoon cuts calories, without sacrificing flavor, using Greek yogurt vs. mayonnaise. Here are the ingredients: 2 dozen eggs, hard boiled; 1 cup plain  whole milk Greek yogurt; 1/2 of an avocado, pit removed; 1/2 teaspoon Cumin; 1/2 teaspoon Paprika; 1/4 teaspoon Cayenne pepper (optional for spice); 1/4 teaspoon salt; 1/8 teaspoon pepper.

Speaking of eggs, adding milk to scrambled eggs makes them extracreamy, adds calcium and a double-dose of protein. Mom always said, “Drink your milk!” But do you know just how important it is that kids get enough milk?

SAY CHEESE, and picture yourself biting into a gooey Smoked Swiss and Mushroom Grilled Cheese this National Grilled Cheese Month. Did you know eating cheese can help build strong teeth? Ohio is the No. 1 producer of Swiss cheese in the country, so look for award-winning Swiss from Ohio cheese makers to make NeighborFood’s scrumptious sandwich. In addition to butter, sturdy bread (such as sourdough) and slices of smoked Swiss cheese for the sandwiches, the mushroom aspect comes from sautéing (in butter and olive oil) sliced mushrooms; thinly sliced onions; minced garlic; dry white wine; pinch of thyme; and salt and pepper. For the full recipe, visit neighborfoodblog.com/2015/04/mushroom-swiss-grilledcheese.html

Of course, asparagus is in season in April, so sprinkle it with Parmesan for a fresh and nutritious snack. Get four more tasty ideas for healthy, picnicready spring snacks at www.drink-milk.com/perfect-pairings/

Fields-of-Corn Photo Contest has started accepting entries

CHRESTERFIELD, Mo. — The National Corn Growers Assoc. reminds photographers that they can help tell the story of farming field corn in America through the fourth annual Fields-of-Corn Photo Contest. Open to all, the Fields-of-Corn photo contest offers a free opportunity for photographers to share their work while competing for 25 cash prizes, including a $500 grand prize. Prizes include cash awards for the top three entries in eight categories, including Corn, Growing Field Corn, Farm Family Lifestyle, Scenery/Landscape, Farming Challenges, SHP Conservation, Little Farmers and one for the most popular as determined by Facebook “likes.”

It is important to note that the Fields-of-Corn Photo Contest is specifically geared toward photos of field corn and not sweet corn. Winners will be announced in January 2018. For details, rules and link to upload your best farm photos, visit http://bit.ly/2pCHjoc
