Falling Star Dairy Farm opens up the recipe box

For over 30 years, our local dairy service unit has hosted an annual dairy twilight tour. I jokingly tell people that everyone should be on some type of a tour about every five years because you get stuff picked up, cleaned up, spruced up and painted up. Landscaping gets done, driveways get graveled, and walls get washed and whitewashed.
The Wayne-Ashland Dairy Service Unit held its second Dairy Summit prior to their annual Twilight tour on July 19 at Falling Star Farm, 626 State Route 89, Polk Ohio. 
The Meyer family operates a 500 cow dairy farm and hatchery, producing poultry for addition to flocks across the Midwest. The twilight tour also included a trade show with over 30 vendors. While the Meyer family is opening up their farm for the tour, they also opened up the recipe box to share some of their favorite recipes and also included is a favorite from their friend and neighbor, Esther Welch.

From the kitchen of Shirley Kerr:
Marg’s Chicken
1 can of chicken
1 can cream of cream of mushroom soup
1 can cream of chicken rice soup
1 can condensed milk
1 pkg chow mein noodles
½ cup chopped celery
½ cup chopped onion
Mix everything together, save some noodles for the top. Bake at 350 degrees for 45-50 minutes. 

From the kitchen of Shirley Kerr: Poor Man’s Steak
1 1b hamburger
1 cup milk
¼ teaspoon of pepper
½ tsp of salt
1 cup of cracker crumbs
1 small onion chopped
Flour
Butter
1 can cream of mushroom soup
1 soup can of water
Combine meat, milk, pepper, crumbs, salt, onion, mix well.
Shape into a narrow loaf & refrigerate for 8 hrs or overnight. Slice into ½ to ¾ inch thick slices and dredge in flour. Brown in butter & place in an ungreased baking pan. Cover meat with soup & water. Bake at 300 degrees for 1 ½ hours.

From the kitchen of Ida Kerr: Ham Loaf
1 ½ lbs of fresh pork
1 lb ham
½ cup of tomato soup (save 2 TBS for the top)
½ cup of finely crushed cracker crumbs
1 egg
Combine all ingredients & bake at 325 degrees for 1 ½ hours.

From the kitchen of Esther Welch, (family farm friend): Baked Sloppy Joes
2 lbs ground beef
1 medium onion chopped
1 cup diced celery
a bit of grated carrot to taste
2 tsp salt & pepper to taste
2 cups dry bread crumbs
2 eggs (beaten)
2 cups tomato juice
2 cups milk
Put in baking dish and bake at 350 degrees for 2 hours until done.
